My Personal Experience
I have not experienced any lags or issues so far and SafetyNet works perfectly fine so Android Pay, Bank apps should work! I noticed the volume UI has been reposition on the left side (yay!). Will be making around 13 videos of One UI 3 in terms of Performance Benchmark, Battery Life, One UI 2.5 vs One UI 3 Camera Processing and many more!
