One UI Core is an extended version of Android Go and core (basic) version of One UI with ONLY essential features/apps. So basically, One UI has more features than One UI Core.

One UI Core devices don't include Samsung Knox (responsible for privacy and security) and doesn't support some of its apps like Samsung Pay, Samsung Pass, Secure Folder. And it doesn't support Good Lock Modules. Certain devices running on One UI Core doesn't support in-built Screen Recorder and Smart View as well.
