I just bought refurbished Samsung galaxy s20 5G device that has been used in Japan and career locked to au. When I bought it, it was carrier unlocked. But the thing is I cannot access the sim card manager option or the eSim option in the device.

Unfortunately there's no esim option under sim card manager option in your Galaxy device. On the other hand, Galaxy S20 5G supports esim.
It seems like the device may have had its carrier unlocking reversed or altered after you bought it. To resolve this, consider contacting the seller or Samsung's customer support for assistance with restoring the eSIM option.
Be sure to click the 3 dots and " ✓ Accept as Solution" when you find an answer that works for you.
