I understand, and am really sorry for the inconvenience. Samsung has pushed the One UI 3 based on Android 11 update in almost all regions.
You have mentioned "The Honk Kong Variant". Unfortunately, as you have a Galaxy Smartphone from a different region, your Galaxy Smartphone may not receive the update. Keep in mind there is a chance you might get the update.
Now that that is out of the way, let's look for possible solutions.
The best thing to do is manually update your Galaxy Smartphone through Samsung Odin. Please make sure you watch a tutorial before proceeding.
*Samsung or I as an individual does not hold any damage or data loss to the Smartphone.
