Why google assistant turn on automatically in Samsung m01

I think it's because of navigation gestures. When you swipe up from the bottom left or right corners Google Assistant will pop up.

Also if you press and hold the button in the headset while you plugged it, Google Assistant will pop up (applicable to Bluetooth headsets also).

Also you can try clearing Google app cache and files, and retraining voice model.
