Hi there,
No update will delete your app data. But if u are coming from Android 10, my personal recommendation is for u to back up all ur data, then install Android 11 and do a factory reset and then restore the backups u did earlier.
That way there won't be any issues. Sometimes when upgrading to a new version of android, some apps begin to crash and issues happen. So my recommendation is to do what i said earlier (its definitely not a must, just a suggestion)

For me.. it didn't but better backup with smart switch because who knows 🤷🏼♂️
