Simply putting it, they've done that to promote their range of bluetooth buds or Galaxy Buds as we call them. This is the main reason. A well known strategy in business is to create a need for a product and then create the product and sell it. This is what they are doing. Initially only with the flagship phones, now its coming down the line. Maybe they are going to release a pair of affordable buds, so that more people can buy buds.

Its like this, you can definitely do recording from buds. If your phone natively doesn't support it, there are apps that will do it also.

If not we have to purchase a USB Type C to 3.5mm adapter and plug it into our charging port, then we can use a 3.5mm headphone with our phones

I'm agreed with @Sadesh_Abey. They create the need and sell the solution. One company start the trend, and others mock it first. After few years follow the trend shamelessly. Same way they did it by removing the charging dock and headphones from the box. 😐
