Galaxy MApple has their iOS and Android have different UIs like PixelOS, One UI, MIUI, OxygenOS, ColorOS according to smartphone manufacturer.
When we consider the cost of a device, do an average non-techy person wants a 200,000+/300,000+ device? It's nothing sense.
My mother (57) is a teacher and she started using a using smartphone (Galaxy M02s) in April 2021 because she had to do Zoom classes. If we think about our childhood are we learn everything at once? Likewise, I didn't do her works. But I teach her how to do. Now she is an expert in her domain.
So my conclusion is nowadays all UIs improved. It doesn't matter are you holding a flagship device or budget device. Your learnability skill makes you familiar with something new to you.
Selecting a device is based on your personal preferences, financial level, etc.

Galaxy MApple company gave updates for their devices several years before android.
When considering privacy it's better in iOS than android.
But, in south Asian countries most iOS users are not able to buy a new model which lasts a long period and also some security features are not also suited for them
