Anyone have idea what's the estimated date we can expect for one ui 7 stable update in June month.

June 25th is confirmed , official rollout plan for Indian users was given by samsung today. Check announcements tab in normal samsung members section

25th is not date, it is year 2025. In this year on month of June it will release, probably in first half of the month.
