20200918 - Great news! David from Samsung Pay contacted me to explain why the 16-digit virtual card number is hidden. But best of all, he gave me a workaround for when POS devices prompt to use it
The agreement now in place (but not yet fully implemented by all banks right now) is to follow the international standard practice of prompting for the last 4 digits of the virtual card number. Which is what the Samsung Pay app displays. 
So when you're prompted for 6 randomly chosen digits from 16-digit virtual card number, it's because the bank has been slow to update its protocol. Most times, it occurs with Nedbank POS devices.
But happily there's a workaround for this .. which is to ask the salesperson to press the yellow button on the POS device. If the transaction is above R500 you'll be prompted for your card PIN, otherwise it will just be a regular swipe and you're done.
