Has anyone received one ui 5.1 update on their galaxy watch?

Not 5.1 but update to make with compatible with 5.1 yes. It will allow you to diagnose your watch from phone on the member's app and also let you zoom while using camera on watch.

I have not received a single update after my watch reset, I had reset my watch in Nov end or Dec start.

They might have rolled it back due to any issue. I am not facing anything as such but can't say. Usually they do this and release another update to fix for those who already installed and for those who will install
