I think One UI 7 is already decided upon. Plus, the feature u are asking can easily be activated via an app.

I don't like having the network mode on my status bar. But that's just me

Yeah, but I need it as an option so users can enable or disable it, based on their preference.

The upgrade will roll out to the Galaxy S24 Ultra in November/December, and other devices will get it later. Normally, the rollout will continue until March/April.
