you can download firmware from Sammobile. and use odin to flash the new firmware (update).
or alternatively you can download smart switch on windows and connect to a computer it will download the update.

Will the smart switch thing remove the rooting stuff?

I don't think so. it only updates the device so data is not deleted. never tested this on a rooted device.
