Galaxy SI disabled WPA3 and reverted to using just WPA2 (AES) (not mixed WPA3-WPA2, but straight up WPA2 only) and it seems to have solved the issue for me. It's been 2 weeks now with no issues, while before it would disconnect after a day or 2.
Regardless, Samsung needs to fix this. The issue has been known since February with several updates after that and still no fix, just workarounds. This shouldn't be happening with a flagship phone at this price level.

Galaxy SHello everyone,
I need to highlight a significant and ongoing problem with the Galaxy S23 Ultra that Samsung has yet to address. Despite months of complaints on Samsung forums, Reddit, and YouTube, the Wi-Fi 6 feature on the phone does not function properly and constantly disconnects.
As a loyal customer, I had high expectations for the Galaxy S23 Ultra's advanced capabilities, including seamless connectivity. However, the Wi-Fi 6 on this device is extremely unreliable, rendering it practically useless for online activities. Many users, myself included, have voiced their frustrations, yet Samsung has remained silent on this matter.
The Wi-Fi connection drops frequently, even when I am near the router. I rely on a stable internet connection for work, streaming, and communication, making this issue particularly bothersome. Troubleshooting attempts, such as network settings resets and device reboots, have proven ineffective.
We deserve better from Samsung. It is disappointing to witness such a renowned company ignore a widespread and critical problem affecting its flagship device. We must unite as a community and urge Samsung to prioritize resolving this issue promptly.
If you are encountering the same Wi-Fi 6 connectivity problem with the Galaxy S23 Ultra or have any potential workarounds, please share your experiences here. Let us make our voices heard and push Samsung to take immediate action.
Thank you for your support, and let's hope for a swift resolution.
Sincerely,
Afam

Galaxy SHello,
I have also posted it on reddit, so may be it can help someone (at least who uses unifi) or even Samsung decided by chance to look at their customers and fix it. But honestly slowly I start to believe that it could be a silicon bug which they do not tell us. Bellow my findings:
""""
I have S23 Ultra and had permanent issues since one day. At home I used Zyxel APs NWA50AX - very nice APs. After about several moths I was full with this and now decided to try Unify U6 series. So now I have 2x U6 Pro and 2x U6+. At first week all was fine. I was happy. Then I found, that even as I have enabled Fast Roaming there is one more option WPA3 Fast roaming. So I have enabled it and not later than after 5 minutes I got again **bleep** problem on my S23 - Connected, no internet connection. I have disabled WPA3 Fast roaming and so far again super stable. Roaming in general continue to work in most cases without traffic interruption.
So I think the problem is WPA3 Fast Roaming. Unfortunately on Zyxel (nebula) I do not see such granular settings so will stick with unifi at the moment.
PS. I am really disappointed how Samsung "handling" this issue.
