Hello. I just checked. You're quite right. It has been removed as ar the latest One UI version. I checked, my older One UI 3.1 Android 11 still has it. Some info re the changes are at the following link:
My only guess re its removal is that it may not have been widely used.
As a workaround, I suggest you make a screenshot of what you wish to have pinned, then open it via the gallery. Next, open the app you wish to continue using and activate multi window.
I don't know if this addresses your specific use-case, but it could be worth a try. All the best.
It is very disheartening to hear this news. This feature has been very important to me and I have been using it for the past year. I believe that the multi-window feature is not a better alternative to the pin-to-screen feature.

To enhance the user experience, we have simplified the interface and provided easier paths to access key features. As part of this update, the Smart Select panel, which was previously a separate panel, has been removed.
لماذا تم حذف ميزة التحديد الذكي وكذلك من اختصارات القلم تم حذف ميزة تثبيت الصورة . كنت استخدمها بشكل يومي لنسخ الارقام او الكلمات الطويلة ميزة التثبية على الشاشة ميزة هواتف النوت ٩ ونوت ١٠ للاسف يعتبر الهاتف الجديد من سامسونج هاتف ناقص من المميزات التي كنت استخدمها سابقا
