No you can't use 1TB card on any of these devices. The maximum memory card supported will be = Total Storage Supported by device - The Inbuilt Storage your device have. For example S20FE 5G supports 1TB so the memory card it will support is 1TB- 128GB= 896GB.
and no, there won't be any performance difference in most cases as long as you are using a good card like Ultra/UHS mark 3 or V90.
