Same i have updated by still not showing 6.1.1, still showing 6.1 only and there is not even security patch level change too

After updating The S23 series has all the features of One UI 6.1.1, but it's still called One UI 6.1.

You will get every one ui 6.1.1 features in s23 ultra except ambient live wallpaper.
