Galaxy SIn terms of updates, if you have been using Samsung phones for a while you would've noticed that updates come in phases and that it's not rolled out to everyone at once like iOS. Bear in mind that Samsung releases more phones than Apple so Samsung has staged rollouts whereas Apple can afford to do things in one go.
If you are a recent Samsung phone user, just know that One UI 7 is a huge update that completely changes the user interface since One UI first came out so it's not too surprising that it took this long.
