I have been using the One UI 7 for a few months now, and below are a few things I noticed.
1. When I enlarge the clock on the lock screen, the notifications overlap with the fingerprint icon/scanner. I think a better implementation is needed here.
2. The Now Bar for music, sometimes, has some lag, e. g. I tab on the play/pause button and no response, or it responds but buttons stays frozen.
3. When I play music, I expect the music bar to stay on my notifications until I remove it myself, that is not the case.
4. The default call background effects that should be dynamic are solid and not working.
5. When I ask Gemini and the answer is long, the screen goes off and I lose everything, when it should be on as long as Gemini is speaking.
6. Many of the apps that used to function perfectly with Dex Mode prior to the update now suffer big screen compatibility issues, e. g. YouTube displays videos in weird too large thumbnails and shorts will not scroll in the Dex Mode, many other apps have window borders that go beyond the TV/Monitor edges, and many more issues. Samsung Dex is to me the most selling factor and a competitive advantage to have PC experience from a phone, more efforts should be dedicated to fixing these issues and developers should be encouraged to customize apps well for dex mode, particularly apps that are best displayed on a bigger screen.

As for One UI 6 on the Galaxy Watch 6 Classic, there too many to count:
Samsung Dex sometimes does not work automatically as soon as HDMI is connected, needs restart. Connected USB Drive does not appear in the notifications so you can mount or uncount.
Sometimes, Android System notification shows for media that is not recognized.
