 After enabling this feature, You will get the icon as a screen overlay app. If you press the icon, you will get some options. Select a screenshot from the options.

 SPEN

To select part of your display and get a screenshot out of it, just pull out your S Pen and from the menu that pops up, choose Smart select. If you're already using your S Pen, tap on the floating bubble with the pen icon and then on Smart select.

 USE GOOGLE OR BIXBY VOICE ASSISTANT 

“Hey Bixby” command, just press and hold on the dedicated Bixby button on the side of the phone, and then say, “take a screenshot” to finish the process. Or Voice Command

The 'Show as edge icons' for the Assistant Menu isn't available on my phone(S8) with the One UI1.0 Maybe it got added later on?
