Force stop,just stops the app from running but you will still have access to the app drawer and you can still use the app whenever you want,but some system apps will automatically restart even if you force stop them.
Force stop is not recommended for routine use..If you force stop any messaging app,that particular app won't push any notifications until you reopen that app again..

Yes for non important apps like Amazon, paytm, netflix etc... notifications from them are not important. Except for messages, contacts, Phone dailer ... i dont think rest of them should run continuously with the exception of system apps.
