I want to ask if I flash UI7 beta on s23ultra do I have to flash all 3 beta and in the end do I have to again flash the official release to get ota updates?

All you have to sideload the beta 1 and then beta 2 ,

Remember when the official oneui 7 released you have to flash through ODIN and then you will get monthly OTAs

I dont hwve to sideload via odin? How to sideload now? And do I need root for that

No you don't need root , the device status will be official knox 0×0,

To sideload, you have to apply update through ADB , no need odin for sideload updates
