Galaxy SI have the same problem. I even tried resetting the phone completely, disabling routines and modes, removing LockStar, but it still happens. It is not related to charging, as it happens even when I'm not charging my phone overnight.
As far as I remember, this started to manifest in the last few weeks for me, before that, it was fine. I'm not sure, but if I remember correctly, it happened just after the second OneUI 8 update
Steps to reproduce:
S24 Ultra latest OneUI, everything up to date -> select dynamic wallpaper -> go to sleep, and in the morning it will change back to the default one

To assist you further, follow these steps:
1. Settings > Software update > Download and install > Download > Install now.
2. Disable Battery Optimization for Wallpaper Services :
Go to Settings > Battery and device care > Battery > Background usage limits > Never sleeping apps, and add Wallpaper services or the app managing your dynamic wallpaper.
3. Reset Wallpaper Services Settings :
If you're using Samsung Dynamic Lock Screen or Modes & Routines, try resetting their settings.
4. Run a diagnosis test via Member app :
Download Samsung member app from Galaxy store then open the app => diagnosis => Phone diagnosis.
