I'm using Samsung Galaxy Note-20-Ultra from 40 days. Whenever I take the picture of a document, the camera of Samsung Galaxy Note-20-Ultra focus on the centre of the page in circular shape, the text on the top corners of page and the bottom corners gets little blurry or unclear. What's the solution of this issue?
In pro mode this thing can be resolved partially.
How do I set the focus to infinity?

Pro mode won't be of much help. Use tele or wide lens as they have aperture of 2.2 or 2 which will give you better focus then standard lens. Also try to straight out paper, flat paper will give you better photo

When you hover your phone camera on any document (in normal 'Photo' mode), a pop-up 'Tap to scan' should appear. Click on that. It automatically captures the document area without focus issues. Don't move in too close to the document. Too close = narrow field = less focus on outer edges. We want a wider field. (Also check above solution that 'dj9494' mentioned).

Just to make sure, check if camera lenses appear dirty (we accidentally touch the camera sometimes, or in pockets it touches other objects like keys or something, the lenses may become smudged).
