Because samsung only work for Premium device M series is just a thing to get samsung in a lead among other brands, otherwise you compare OneUi stability with Flagship Devices of samsung they are much better and smoother because they test it in 5 beta stages
Brother few features will be available to you via future updates provided by Samsung. Don't be disappointed. You are one of the few users who are getting One UI 2 at earliest, so there may be a chance that few features may be missing. Its happen to me earlier, later on Samsung solved it. Be patient and keep checking for regular updates.
that's because you actually are not getting One UI. It's One UI Core. Which means you can't get all the features of One UI. We are getting update to our previous core version.
