I think what you meant by lag is drop of frames
Did it start happening recently ?
What about any other normal screen record?
What is your recording fps ,resolution and video quality?
May be cause when you use your Screen recorder to record games
CPU has to work harder to keep up recording frame rate and game frame rate
So to give maximum gaming performance phone may have cut down some amount of fps out of the recording
What about the temperature of your device in the above situation?
You can try Force stopping Game launcher and restarting
And there may be some background processes causing issues .

I Don't know what's happening but. display is fhd 60Hz and game launcher recordings should be 60hz or 30hz. and It began with this latest update android 11 and ui 3.0
I record more than 10 min perfectly on android 10. n I check hardware status cpu/ gpu/ ram/ and fps rate while recording. that was perform generally.. zoom into this hardware meter what i circled in the picture. n I tried may setting of them
