any third party camera apps for galaxy M31, where i can use pro mode better??

Until your phone has camera api2 support, no third party app can let you use full pro mode options.
And as per i know, m31, like m30s, dosent have full camera api2 support.

Download an app called camera 2 api probe from play store
link: https://play.google.com/store/apps/details?id=com.airbeat.device.inspector
then open the app.
under the 'hardware support level' category, if your phone shows 'full' (or level3) ticked, then it supports camera api2 fully. Otherwise, partial support (limited)
or no support at all (legacy)
for my m30s its like the ss attached.
P.S. its usually same for both the camera types (front and rear).

That basically means you wont be able to use all the pro mode options.
api2 support can be enabled on many devices by forcing some commands via adb shell after rooting, but I wont recommend it. Also, I don't know if it works on Samsung devices.

Can you describe better? I dint get, I had try do it on the na tive câmera but I cant unistal the upgrade.

update camera app before that uninstall camera app updates clear cache and re update

the api2 support should be there for pro mode
