One UI 8.0 is under beta testing. When final version get released it will be S series first starting from S25, then A series and M series. It a long wait for M series phones to get one UI 8.0. Hold your horses and explore one UI 7.0 to fullest meanwhile !!.

Official date cannot be specified. Earlier as per notification sent it was June 2025. Samsung, for reasons known to them could not release in June. Thus you should expect one UI 7.0 this month.
