I use greyscale mode heavily on my mobile phone because colors strain my eyes.
There was an option in my previous Redmi device to toggle bedtime mode in status bar which used to make my display greyscale.
There is no such option in Samsung devices.
Additionally google digital well being is incompatible with Galaxy m51 while the default digital well being application shipped on samsung phone does not have this options.
It's a humble request to please add an option to toggle bedtime mode/greyscale mode in status bar in upcoming release since currently the only way to do it is via developer options🙏

Update:- Samsung now provides an accessibility button in latest software update. I am now able to use greyscale toggle feature easily by adding accessibility button at the right side of lower navigation button. Thanks a lot to Samsung team for solving this issue. Leaving this thread open for others to find this solution as well.

If it's not in Digital Wellbeing app then check it in Developer Options.

Also, you can use Greyscale from Play Store. You will need to enter a command or two using adb.
