bro for call recording samsung took that feature away idk why but it should be brought back and as far as the update goes atlsast w8 bro android 11 just released last months and it takes atleast 2 month for even the flagships to get the update no matter what brand it is Samsung's updates are usually delayed because they also have to develop a newer version of OneUI adding more features.
