It's only for bed time when you go to sleep and don't want to disturb yourself on bed mode

First of all bed time mode is an android feature probably started from android 9 or 10, so Samsung included it too.
Second, it's beneficial when you want to regulate your sleep and awake time & no disturbance while sleeping.
Bedtime mode greyed out your screen to inform you it's bed time & mutes your ring tunes so you may not get disturbed with calling. 😊
