Try using the Pro mode, it gives you the ability to fine tune shooting controls such the EV value! Or, if your device supports it, install the raw expert app. It's a camera feature extension by Samsung themselves.
The Raw Expert app is only available on the last 3 ultra phones (S21, S22 and Note 20) as well as some the past 2 fold phones. Only about 5 or 6 phones at the moment.
Are you asking about filters? There's like a wand icon somewhere on the Camera UI. You'll have to find it because I'm sure it's different on most phones. Mine is on the top right.
