Yes. It's not tied to the operating system in any way. You can uninstall. So if you want some space and not using the the Microsoft apps, you can uninstall.

It depends. If you cannot uninstall the Microsoft apps then you can disable it in Settings>Apps. Select the Microsoft apps one by one and select disable. Remember to clear data to free space. Select Storage, select Clear data in App info page.
