Samsung Galaxy S21 Ultra after Software Updating on 11-02-2021 home screen grid option gone & self created Folders also gone and because of all icons are bigger my phone looks very bed.. kindly any one help me

there is an option to go to last version then try it... may be your self created folders will appear once again...

where is the option and what about other things like Home Screen Grid layout option not exist after update

Home Screen grid option is still exist, go into Settings - Home Screen. Regarding self Created Folders, this the right to implement it :

1 - Hold the app until the option menu pops up

2 - Press Select option

3- Choose the any apps you want to be in same folders

4 - Evantually, tab create folder.
