Adobe scan. I found it very useful.
You can try Camscanner as well.
Also I saw a built-in in S24ultra "scan document". Have not tried it yet

Adobe is a good one. I use that with Creative Cloud.

In addition to Adobe as @Akrammi mentioned, if you are in Microsoft's ecosystem, you can use Microsoft365 [image attached].

If you're in Dropbox's ecosystem, you can also use the Dropbox app for Android [image attached].

Both Microsoft365 and Dropbox will autosave your scans to your applicable cloud accounts, etc. The Microsoft365 app has text extraction if you wish to do so, post-scan.

Finally, the recent Galaxy S series phones [mostly, I think] have that function built into the Camera app. It is so on my S22 Ultra.
