M21 also runs on one ui Core and have not miss a single feature of m31s. And these two also have 5K price difference

this "why" question is very complicated, if every user asking that question then its not possible to get answered, as every device user can ask and can give examples of minor price difference.
so in my opinion choose the mobile which fulfill your requirements.

bro we all know its a basic feature now a days, but think of that stock android not have built in screen recorder... samsung need to reduce some features in m series... android 11 will give this feature in stock android so samsung need to provide it with 11 update..
