How to pin a note to #AOD, not the screen off memo, I need to know how to pin an already saved note to #AOD

Which device? There is no such option in my A71.

You Can't Pin already Saved Note to AOD.
You can save just wrote Screen off Memo to AOD by Tapping on pin option on top right side.

Yes, but on the internet I can see some 2018 videos in which we can save already saved notes on AOD,
I am not able to save reminders on AOD as well.

Try this
Select that note
go to top right and select share
Select Share as Text
than in the Share options
select AOD.
DONE 👍

Sir, I tried this couldn't find AOD as an option in the sharing opinions.
if you can find please share a screenshot.

Present You can only save Screen off memos to AOD directly, or else you can pin already written Note to Homescreen.
For reminder, you can't add any reminder from AOD you can set reminder by using Calendar app or Through Bixby and those reminder can be seen on AOD.
There was feature to add Note to AOD but it's removed for now.

1. Launch the Samsung Notes app (located in the Samsung folder in the app drawer), then jot down anything as per your preference and then tap SAVE

2. Next, tap the share button located next to the three-dot button and select Text only to bring up the share menu. Tap Always On Display located in the share menu.

3. A preview screen will now be displayed to give you an idea of how the pinned note will look and feel on the AOD. Also, relevant instructions will be shown on the preview screen.
